Back To School Cookie Exchange


For back-to-school lunch box treats and ideas, have each boy bring 2 dozen cookies and the
recipe on a 3x5 card. 1/2 dozen to eat and 1-1/2 to exchange. (Be sure to have extra cookies on
hand in case a boy forgets.) Let the boys take home the cookies and the next den or pack
meeting, supply them with a copy of the recipes.

 

Caramel Turtles 

                                                                                            
These make a great gift idea for the hard-to
please dad or a service project. Wrap
individually in green plastic for turtle effect,
or between layers of waxed paper in a
covered container.
1 1/3 cups pecan halves
18 squares caramel candies, individually
wrapped
1/2 cup semisweet chocolate chips or
chopped chocolate
Preheat oven to 350 degrees. Slice or break
pecan halves lengthwise to make slivers for
four feet, head, and tail. For each turtle,
arrange six nut pieces as shown here on a
foil-lined cookie sheet. Unwrap one caramel
square and cut it in half. Set one half on top
of each cluster of nut pieces. Without
disturbing the arrangement, place the cookie
sheet in the oven for 3-4 minutes. Watch
carefully so nuts don’t burn. The caramels
will melt onto the nuts forming the turtle’s
shell. Remove tray from oven and set a few
chocolate chips on each “shell.” return to the
oven for a few seconds to melt the
chocolate. Spread the chocolate with the
back of a spoon. Remove foil from the baking
sheet and let turtles cool completely. Makes
36 turtles.

Individual Baked Alaska


In the Dog Days of September when school
has started and its too hot to do anything,
Baked Alaska will awaken the curiosity
within. (How can you put ice cream in a hot
oven and not have it melt??)
4 cupcakes
1/2 pint ice cream
4 egg whites 1/4 cup sugar
Fill hollowed-out cupcakes with ice cream;
freeze at least 4 hours. Make meringue by
whipping egg whites until stiff. Then, still
whipping, add sugar until the mixture is the
consistency of marshmallow cream. Spread
the meringue on the cupcake with a knife,
and then quickly brown for three minutes
under the broiler. Serve immediately.


Caramel Apple Cider


1 package caramel apple wraps
(sold in the produce department
of grocery stores), Lollypop sticks
(sold in craft stores), 1-gallon apple cider
Cut each wrap into thirds and wrap around a
lollypop stick wide end to point. Heat up
cider and pour into mugs. Drop caramel
swizzle stick in and stir gently. Top stick
with fresh apple chunk.
