Baked Snowflakes
Six flour tortillas
vegetable oil
powdered sugar
edible glitter
Preheat the oven to 400 degrees. Warm tortillas in the microwave for about 15 seconds. Individually fold the
tortillas in half once, then in half again so that you end up with a shape that resembles a wedge of pie.
Using clean scissors, cut triangles, circles, or squares out of the edges (as if you were cutting a paper
snowflake). Unfold the tortillas, lightly brush the tops of the snowflakes with the oil and place them
on the cookie sheet. Bake them until lightly browned and crisp (about 4 minutes). Sift powdered
sugar onto the snowflakes while still warm. Sprinkle with edible glitter.
Apple Empanadas (Mexico)
1 21oz. canned apple pie filling or
any flavor you like
Six flour tortillas
1 tsp. cinnamon
1/3 cup margarine
1/2 cup sugar
1/2 cup brown sugar
1/2 cup water
Spoon fruit evenly onto all tortillas. Sprinkle with cinnamon. Roll up tortillas and place seam
side down on a lightly greased 8"x8" pan. Bring margarine, sugars, and water to a boil in a
medium saucepan. Reduce the heat and simmer, stirring constantly, for 3 minutes. Pour sauce
evenly over tortillas. Sprinkle with extra cinnamon on top. Bake at 350 degrees for 20 minutes.
Cut in half and serve warm.
Creamy Apple Kuchen (Germany)
3 cups apples peeled, cored, and thinly sliced
1 Tbsp. lemon juice
1 1/4 cups sugar
1 tsp. cinnamon
1 cup butter, melted
2 eggs, beaten
1 1/2 tsp vanilla
1/4 tsp salt
1 1/2 tsp. baking powder
2 cups flour
1 cup light sour cream
1 egg
Preheat the oven to 350 degrees and
spray a 9"x13" pan. In a medium
bowl, combine the apples, lemon
juice, 1/4 cup sugar, and cinnamon.
Set aside. In a large bowl, mix
together the melted butter and
remaining sugar. Add the two eggs
and vanilla. Stir in the salt and
baking powder, then add the flour.
Spread the batter in the pan, then
top it with the apple and lemon
juice mixture. Combine the sour
cream and remaining egg in a small
bowl, then pour the mixture over the
apples. Bake for about 30 - 35 min.
